Watermelon Feta Salad
Ingredients
- 1/2 medium watermelon cubed (about 6 cups)
- 1 English cucumber thinly sliced
- 1/4 small red onion thinly sliced
- 3/4 cup crumbled feta cheese
- 1/4 cup fresh mint leaves torn
- Zest of 1 lemon
- Juice of 1 lemon
- 2 tbsp extra virgin olive oil
- Freshly cracked black pepper to taste
- Flaky sea salt optional
Instructions
- Add the cubed watermelon, sliced cucumber, and red onion to a large serving bowl.
- Sprinkle over the crumbled feta and torn mint leaves.
- Add the lemon zest and squeeze the fresh lemon juice over the salad.
