Garlic & Chive Mashed Potatoes

- 2 lbs Yukon Gold potatoes peeled and cut into large chunks
- 4 cloves garlic peeled
- 4 tbsp unsalted butter
- 1/2 cup whole milk warmed
- 1/4 cup sour cream
- 2 tbsp fresh chives finely chopped
- 1 tsp kosher salt plus more for boiling water
- 1/2 tsp freshly cracked black pepper

Instructions
- Bring a large pot of generously salted water to a boil.
- Add the potatoes and garlic cloves. Cook for 15–20 minutes, or until the potatoes are fork tender.
- Drain the potatoes and garlic well, then return them to the warm pot for 1 to 2 minutes over low heat to allow any excess moisture to evaporate.
- Mash the potatoes and garlic together until mostly smooth using a potato masher or ricer.
- Add the butter, warm milk, sour cream, salt, and pepper. Mash until smooth and creamy. Add a splash more milk if needed to reach your desired consistency.
- Fold in the fresh chives.
- Transfer to a serving bowl and finish with an extra pat of butter, more chopped chives, and freshly cracked black pepper before serving.
