Mango Chia Seed Pudding

If you’re looking for a breakfast that’s healthy, filling, and requires almost no effort, this Mango Chia Seed Pudding is about to become your new favourite. It’s creamy, refreshing, naturally sweetened with mango and maple syrup, and packed with protein and fibre to keep you satisfied for hours.

One of the best parts about this recipe is that it does all the work while you sleep. Simply blend the mango, almond milk, maple syrup, and vanilla protein powder until smooth, stir in the chia seeds, and let the refrigerator do the rest overnight. By morning, you’ll have a thick, creamy pudding that’s ready to enjoy straight from the fridge. It’s perfect for busy weekdays, meal prep Sundays, or whenever you want a nutritious breakfast waiting for you.

The frozen mango gives the pudding a naturally tropical flavour and beautiful golden colour, while the vanilla protein powder adds a boost of protein that makes this breakfast satisfying enough to power you through your morning. Fresh diced mango on top adds a burst of sweetness and a refreshing texture that pairs perfectly with the creamy chia pudding.

This recipe makes two generous servings, making it ideal for sharing or preparing breakfast for the next day. We love serving it in glass jars for an easy grab-and-go breakfast, but it’s just as delicious enjoyed at home with a cup of coffee on a slow summer morning.

You can also customize it with your favourite toppings like toasted coconut, sliced almonds, granola, hemp hearts, or fresh berries. It’s naturally dairy-free, loaded with fibre, and a simple way to add more protein to your morning routine without spending time cooking.

Whether you’re meal prepping for the week, looking for a healthier breakfast, or just craving something cool and refreshing on a warm day, this Mango Chia Seed Pudding is a recipe you’ll make all summer long. It’s easy, nutritious, and tastes like sunshine in every bite.
