The combination of seasoned ground beef, crisp romaine, juicy tomatoes, sharp cheddar, crunchy tortilla chips, creamy guacamole, and a bright lime cilantro crema creates the perfect balance of flavours and textures in every bite. It’s fresh enough for summer, hearty enough for dinner, and requires very little cleanup, making it ideal for busy weeknights.
One of our favourite things about these bowls is how versatile they are. Add black beans, corn, cooked rice, pickled onions, avocado, salsa, or your favourite hot sauce to make them your own. You can even swap the ground beef for ground chicken, turkey, or plant-based meat depending on what you have on hand.
They’re also fantastic for meal prep. Simply prepare the taco meat and chop the vegetables ahead of time, then assemble each bowl just before serving to keep everything crisp and fresh. The lime cilantro crema takes only a minute to whisk together but adds a bright, creamy finish that ties the whole bowl together.

Ingredients
Taco Beef
- 1 lb lean ground beef
- 2 tbsp taco seasoning
- Salt and freshly cracked black pepper to taste

- 2 romaine hearts chopped
- 2 Roma tomatoes diced
- 1/2 red onion finely diced
- 1 cup shredded sharp cheddar cheese
- 2 cups crushed tortilla chips
- 1 cup guacamole
- Fresh cilantro chopped
- Sliced jalapeños or your favourite peppers
Lime Cilantro Crema
- 20 g light mayonnaise
- Juice of 1/2 lime
- 2 tbsp fresh cilantro finely chopped
- Salt and pepper to taste
Instructions
- Heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it apart with a spoon, until browned and fully cooked, about 8 to 10 minutes. Drain any excess grease if needed.
- Season the beef with the taco seasoning, salt, and pepper. Stir well and cook for another minute until everything is evenly coated.
- In a small bowl, whisk together the light mayonnaise, lime juice, chopped cilantro, salt, and pepper until smooth.
- Divide the chopped romaine between four serving bowls.
- Top with the seasoned taco beef, diced tomatoes, red onion, shredded cheddar, crushed tortilla chips, guacamole, chopped cilantro, and sliced jalapeños.
- Finish with a generous drizzle of the lime cilantro crema and serve immediately.
