Mango Chia Seed Pudding
This Mango Chia Seed Pudding is the perfect make-ahead breakfast for busy mornings. Made with real mango, vanilla protein powder, and chia seeds, it's creamy, naturally sweet, and packed with protein and fibre to keep you full all morning. Prep it the night before for an easy grab-and-go breakfast or refreshing afternoon snack.

- 1 cup frozen mango
- 1 1/2 cups unsweetened vanilla almond milk
- 1/4 cup maple syrup
- 1/2 cup chia seeds
- 1 scoop vanilla protein powder we used Good Protein
- Fresh mango diced, for topping
Add the frozen mango, almond milk, maple syrup, and vanilla protein powder to a blender. Blend until completely smooth.
Pour the mixture into a large bowl or airtight container.
Whisk in the chia seeds until evenly distributed.
Let the mixture sit for 5 minutes, then whisk again to prevent the chia seeds from clumping together.
Cover and refrigerate overnight, or for at least 6 hours, until thickened.
Divide into bowls or jars and top with fresh diced mango before serving.
