Ingredients
Protein Balls
- ½ cup almond flour
- ½ cup oat flour
- 1 scoop unflavoured protein powder we use Good Protein
- Zest of 1 lemon
- Juice of 1 lemon
- 1 to 2 tbsp honey
- ¼ tsp vanilla extract
White Chocolate Coating
- ½ cup white melting chocolate chips
- Extra lemon zest for garnish
Instructions
- In a large mixing bowl, combine the almond flour, oat flour, and protein powder.
- Add the lemon zest, lemon juice, honey, and vanilla extract. Stir until a soft dough forms. If the mixture feels too dry, add a teaspoon of water or a little more lemon juice. If it’s too wet, mix in a little more oat flour.
- Divide the mixture evenly and roll into 6 large protein balls.
- Melt the white chocolate in the microwave using 20-second intervals, stirring until smooth.
- Dip or drizzle each protein ball with the melted white chocolate.
- Sprinkle with fresh lemon zest while the chocolate is still wet.
- Refrigerate for about 20 minutes, or until the chocolate has fully set.
