Lemon Shortbread Protein Balls
These Lemon Shortbread Protein Balls are bright, buttery, and packed with fresh lemon flavour in every bite. Inspired by classic lemon shortbread cookies, they're made with almond flour, oat flour, and protein powder for an easy no-bake snack that tastes more like dessert than a protein treat. Finished with creamy white chocolate and fresh lemon zest, they're the perfect balance of sweet and citrusy.

Protein Balls
- ½ cup almond flour
- ½ cup oat flour
- 1 scoop unflavoured protein powder we use Good Protein
- Zest of 1 lemon
- Juice of 1 lemon
- 1 to 2 tbsp honey
- ¼ tsp vanilla extract
White Chocolate Coating
- ½ cup white melting chocolate chips
- Extra lemon zest for garnish
In a large mixing bowl, combine the almond flour, oat flour, and protein powder.
Add the lemon zest, lemon juice, honey, and vanilla extract. Stir until a soft dough forms. If the mixture feels too dry, add a teaspoon of water or a little more lemon juice. If it's too wet, mix in a little more oat flour.
Divide the mixture evenly and roll into 6 large protein balls.
Melt the white chocolate in the microwave using 20-second intervals, stirring until smooth.
Dip or drizzle each protein ball with the melted white chocolate.
Sprinkle with fresh lemon zest while the chocolate is still wet.
Refrigerate for about 20 minutes, or until the chocolate has fully set.
Enjoy straight from the fridge or let sit at room temperature for a few minutes before serving
