Mango Chia Seed Pudding
Ingredients
- 1 cup frozen mango
- 1 1/2 cups unsweetened vanilla almond milk
- 1/4 cup maple syrup
- 1/2 cup chia seeds
- 1 scoop vanilla protein powder we used Good Protein
- Fresh mango diced, for topping
Instructions
- Add the frozen mango, almond milk, maple syrup, and vanilla protein powder to a blender. Blend until completely smooth.
- Pour the mixture into a large bowl or airtight container.
- Whisk in the chia seeds until evenly distributed.
- Let the mixture sit for 5 minutes, then whisk again to prevent the chia seeds from clumping together.
- Cover and refrigerate overnight, or for at least 6 hours, until thickened.
- Divide into bowls or jars and top with fresh diced mango before serving.
