Cheesecake Cookie Dough Balls

Ingredients

- 1 tbsp maple syrup
- ¼ tsp salt
- ¾ cup almond flour
- ½ cup vanilla protein powder we use Good Protein
- ¼ cup dark chocolate chips
- ¼ cup dark chocolate chips for drizzling
- 1 tsp coconut oil
Instructions
- In a large bowl, combine the blended cottage cheese, maple syrup, and salt until smooth.
- Add the almond flour and vanilla protein powder, then mix until a thick cookie dough forms.
- Fold in the dark chocolate chips.
- Roll the mixture into 8 equal-sized balls and place them on a parchment-lined plate or baking sheet.
- Melt the remaining dark chocolate chips with the coconut oil in the microwave using 20-second intervals, stirring until smooth.
- Drizzle the melted chocolate over each cookie dough ball.
- Refrigerate or freeze for about 20 minutes, or until the chocolate has set.
