Ingredients
  

  • ½ cup blended cottage cheese
  • 1 tbsp maple syrup
  • ¼ tsp salt
  • ¾ cup almond flour
  • ½ cup vanilla protein powder we use Good Protein
  • ¼ cup dark chocolate chips
  • ¼ cup dark chocolate chips for drizzling
  • 1 tsp coconut oil

Instructions
 

  • In a large bowl, combine the blended cottage cheese, maple syrup, and salt until smooth.
  • Add the almond flour and vanilla protein powder, then mix until a thick cookie dough forms.
  • Fold in the dark chocolate chips.
  • Roll the mixture into 8 equal-sized balls and place them on a parchment-lined plate or baking sheet.
  • Melt the remaining dark chocolate chips with the coconut oil in the microwave using 20-second intervals, stirring until smooth.
  • Drizzle the melted chocolate over each cookie dough ball.
  • Refrigerate or freeze for about 20 minutes, or until the chocolate has set.
  • Enjoy immediately or store for an easy grab-and-go snack throughout the week.
