Chunky Monkey Dates
Equipment
- Cutting board
- Knife
- Parchment paper
- Glass or measuring cup for flattening
- Microwave-safe bowl
Ingredients
- 5 Medjool dates pitted and sliced in half
- ½ banana sliced into 10 rounds
- 2 tbsp natural peanut butter
- ⅓ cup semi-sweet or dark chocolate chips
- Flaky sea salt for finishing
Instructions
- Slice each Medjool date in half lengthwise and remove the pit.
- Place the dates cut-side down between two sheets of parchment paper and gently flatten them using the bottom of a glass.
- Top each flattened date with one banana slice.
- Add a small dollop of natural peanut butter on top of each banana slice.
- Melt the chocolate chips in the microwave in 20-second intervals, stirring between each interval until smooth.
- Spoon the melted chocolate over each date, covering the peanut butter and banana.
- Finish with a pinch of flaky sea salt.
- Transfer to the freezer for 15–20 minutes, or until the chocolate has set.
- Enjoy straight from the freezer or let sit for a minute or two before eating.
