Garlic & Chive Mashed Potatoes

These Garlic & Chive Mashed Potatoes are rich, buttery, and perfectly creamy with just the right amount of fresh garlic and chives. They're the ultimate side dish for everything from weeknight dinners to holiday feasts, and they're incredibly easy to make.

  • 2 lbs Yukon Gold potatoes peeled and cut into large chunks
  • 4 cloves garlic peeled
  • 4 tbsp unsalted butter
  • 1/2 cup whole milk warmed
  • 1/4 cup sour cream
  • 2 tbsp fresh chives finely chopped
  • 1 tsp kosher salt plus more for boiling water
  • 1/2 tsp freshly cracked black pepper

Instructions
 

  • Bring a large pot of generously salted water to a boil.
  • Add the potatoes and garlic cloves. Cook for 15–20 minutes, or until the potatoes are fork tender.
  • Drain the potatoes and garlic well, then return them to the warm pot for 1 to 2 minutes over low heat to allow any excess moisture to evaporate.
  • Mash the potatoes and garlic together until mostly smooth using a potato masher or ricer.
  • Add the butter, warm milk, sour cream, salt, and pepper. Mash until smooth and creamy. Add a splash more milk if needed to reach your desired consistency.
  • Fold in the fresh chives.
  • Transfer to a serving bowl and finish with an extra pat of butter, more chopped chives, and freshly cracked black pepper before serving.
