Ingredients
Cookie Dough Layer
- 1/2 cup almond flour
- 1/4 cup pure maple syrup
- 1/8 to 1/4 cup melted coconut oil start with 1/8 cup and add more if needed for a smooth consistency
- 1 tsp vanilla extract
- Pinch of salt
Chocolate Topping
- 1/3 cup chocolate chips
- 1 tsp coconut oil
Instructions
- Line a small plate or tray with parchment paper.
- In a medium bowl, combine the almond flour, maple syrup, melted coconut oil, vanilla, and salt. Stir until a smooth, cookie dough-like mixture forms.
- Spread the mixture evenly onto the prepared parchment paper, about 1/4-inch thick.
- In a microwave-safe bowl, melt the chocolate chips with the coconut oil in 20-second intervals, stirring between each, until smooth.
- Drizzle the melted chocolate over the cookie dough layer.
- Place in the freezer for 45-60 minutes, or until completely firm.
- Break into pieces and enjoy straight from the freezer.
