Smoky Chicken Lollipops

These smoked chicken lollipops are one of those recipes that look way more impressive than they actually are to make. Chicken drumsticks are shaped into lollipops, coated in a simple smoky seasoning, and smoked at 375°F until juicy, tender, and packed with flavour.

We kept these super simple and did not use a glaze or sauce. The chicken is dry seasoned before smoking, which lets the smoky flavour and spices really shine. The result is juicy chicken with beautifully browned, flavourful skin and crispy edges.

How to Make Smoked Chicken Lollipops

Prepare the chicken

Start by turning your chicken drumsticks into lollipops. Using a sharp knife, cut around the drumstick near the narrow end, just above the joint. Scrape or push the meat down toward the thicker end of the drumstick, exposing the bone.

Remove any excess skin, cartilage, or connective tissue around the exposed bone.

Don’t worry if they aren’t perfectly uniform. Once they’re seasoned and smoked, they’ll still look great.

Season the chicken

Pat the drumsticks dry with paper towel. This helps the seasoning stick to the chicken and encourages better browning while they cook.

Lightly coat the chicken with olive oil, then season generously with smoked paprika, garlic powder, onion powder, salt, black pepper, chili powder, and a little cayenne if you like some heat.

Make sure the seasoning covers all sides of the chicken.

Smoke

Preheat your smoker to 375°F.

Place the chicken lollipops directly onto the smoker with the exposed bones facing up. Smoke for approximately 30 minutes, or until the chicken reaches an internal temperature of at least 165°F.

Because drumsticks contain more connective tissue than chicken breast, we like taking them a little higher than the minimum safe temperature. Around 175–185°F can result in more tender, juicy dark meat.

Rest and serve

Once the chicken is cooked through and the outside is nicely browned, remove the lollipops from the smoker and let them rest for about 5 minutes.

Serve them as-is or with your favourite dipping sauce on the side.

Tips for the Best Chicken Lollipops

Dry the chicken well. Removing excess moisture from the skin helps the seasoning adhere and gives you better browning.

Don’t be afraid of seasoning. Drumsticks can handle a generous amount of seasoning, especially when you’re not using a glaze or sauce.

Use a meat thermometer. Cooking time can vary depending on the size of your drumsticks and your smoker, so temperature is the best way to know when they’re ready.

Don’t worry about hitting exactly 165°F. That’s the minimum safe internal temperature for chicken, but dark meat often has a better texture when cooked a little higher.

Serve them hot. These are best straight off the smoker after a short rest, when the skin is at its best.

What to Serve With Smoked Chicken Lollipops

These are great for a backyard BBQ, game day, or an easy weeknight dinner. Serve them alongside grilled corn, roasted potatoes, coleslaw, mac and cheese, or a simple green salad.

They’re also great as an appetizer since the exposed bone makes them easy to pick up and eat.

  • Make the glaze: While the chicken cooks, whisk together the BBQ sauce, honey, hot sauce, melted butter, smoked paprika and garlic powder.
  • Glaze the chicken: Brush the chicken generously with the glaze during the final few minutes of cooking. Continue cooking until the glaze becomes sticky and caramelized and the chicken reaches your desired level of doneness. For especially tender drumsticks, you can cook them beyond 165°F.
  • Rest and serve: Remove the chicken from the smoker and let it rest for 5 minutes. Serve warm with extra glaze or BBQ sauce for dipping.
