Bowls
- 100 g jasmine rice uncooked
- 3 small salmon fillets about 300 g total, cut into bite-sized cubes
- Salt & pepper to taste
- 1 tsp garlic herb seasoning
- ½ English cucumber diced
- 1 medium carrot julienned
- 1 ripe avocado diced
- 2 green onions thinly sliced
- 2 tsp sesame seeds
Bang Bang Sauce
- 20 g light mayonnaise
- 5 g sriracha
- 5 g hot honey
- Pinch of salt & pepper
Cook the jasmine rice according to the package directions.
Season the cubed salmon with salt, pepper, and garlic herb seasoning. Air fry at 400°F (200°C) for 8 minutes, shaking the basket halfway through.
While the salmon cooks, dice the cucumber and avocado, julienne the carrot, and slice the green onions.
Stir together the light mayonnaise, sriracha, hot honey, salt, and pepper until smooth.
Divide the rice evenly between two bowls. Top with the salmon, cucumber, carrot, avocado, and drizzle with the bang bang sauce.
Garnish with the green onions and sesame seeds. Serve immediately.
