Authentic Carbonara
Ingredients
- 200 g spaghetti
- 150 g guanciale diced (or pancetta if unavailable)
- 2 large egg yolks
- 1 large whole egg
- 75 g Pecorino Romano finely grated
- Freshly cracked black pepper to taste
- Salt for the pasta water
Instructions
- Bring a large pot of generously salted water to a boil. Cook the spaghetti until al dente according to the package instructions. Reserve 1 cup of the pasta water before draining.
- While the pasta cooks, place the guanciale in a large skillet over medium heat. Cook for 8 to 10 minutes, stirring occasionally, until the fat has rendered and the guanciale is golden and crispy. Remove the skillet from the heat.
- In a medium bowl, whisk together the egg yolks, whole egg, grated Pecorino Romano, and a generous amount of freshly cracked black pepper until smooth.
- Transfer the cooked spaghetti directly to the skillet with the guanciale and toss to coat in the rendered fat.
- Let the pasta cool for about 30 seconds so it’s hot but not scorching. Pour the egg and cheese mixture over the pasta, tossing continuously until a silky sauce forms.
