Tiramisu Cookies

Soft and chewy espresso-kissed cookies are topped with a light mascarpone cream and finished with a dusting of cocoa powder for that signature tiramisu flavour in every bite.

Cookies
- 55 g unsalted butter melted
- 45 g granulated sugar
- 52 g brown sugar
- 1 egg
- 1 tsp vanilla extract
- 112 g all-purpose flour
- 1 tsp cocoa powder or espresso powder
- ½ tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
Mascarpone Topping
- 2 tbsp mascarpone cheese
- 2 tbsp icing sugar
- ¼ tsp vanilla extract
- 2 tbsp heavy whipping cream
Preheat oven to 350°F and line a baking sheet with parchment paper.
Mix butter, granulated sugar, brown sugar, egg, and vanilla until smooth.
Fold in flour, cocoa powder or espresso powder, baking powder, baking soda, and salt.
Divide into 5 dough balls and place on baking sheet.
Bake for 9-10 minutes and cool completely.
Mix mascarpone, icing sugar, and vanilla until smooth.
Add whipping cream and beat until peaks form.
Pipe topping onto cookies.
Dust with cocoa powder and serve.
