- 1 thick slice sourdough bread
- 2 oz 55 g brie cheese, sliced
- 2-3 slices prosciutto
- 1 ripe peach sliced
- 1 tbsp unsalted butter
- 1 tbsp brown sugar
- Fresh thyme leaves for garnish
- Freshly cracked black pepper
- Hot honey for serving (optional)
Heat a small skillet over medium heat and melt the butter.
Add the sliced peaches and brown sugar.
Cook for 4-5 minutes, stirring occasionally, until the peaches are softened and caramelized.
Toast the sourdough until golden brown and crisp.
Top the warm toast with slices of brie cheese.
Place under the broiler for 1-2 minutes, or until the brie is melted and bubbly.
Spoon the caramelized peaches over the melted brie.
Layer the prosciutto on top, tearing it into smaller pieces if desired.
Garnish with fresh thyme leaves and freshly cracked black pepper.
Drizzle with hot honey, if using.
