Dumplings
- 1 lb lean ground pork or ground chicken
- ½ cup shredded carrots
- ½ cup finely chopped mushrooms
- 2 green onions thinly sliced
- 2 cloves garlic minced
- 1 tsp grated ginger
- ½ tsp kosher salt
- ½ tsp black pepper
- ½ tsp smoked paprika
- 24 round dumpling wrappers
For Cooking
- 1 tbsp neutral oil
- ¼ cup water
Dipping Sauce
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- Chili crisp to taste
In a large bowl, combine the ground pork, carrots, mushrooms, green onions, garlic, ginger, salt, pepper, and smoked paprika until evenly mixed.
Place about 1 tablespoon of filling in the centre of each dumpling wrapper. Lightly wet the edges with water, fold in half, and pleat or press the edges firmly to seal.
Heat a large non-stick skillet over medium heat with the neutral oil.
Arrange the dumplings in a single layer and cook for 2 to 3 minutes until the bottoms are golden brown.
Carefully pour the water into the pan and immediately cover with a lid. Steam for 6 to 8 minutes, or until the filling is fully cooked and the water has evaporated.
Remove the lid and cook for another minute to crisp up the bottoms.
Serve immediately with soy sauce, rice vinegar, and chili crisp for dipping
